Fooditive's upcycled sweetener is made through a process of upcycling apples and pears that were discarded. We partnered with local farmers and other side streams to collect the raw materials needed. Instead of letting these valuable resources go to waste, we transform them into a zero-calorie sweetener, perfect for a wide range of applications in the food and beverage industry.

Detailed description of the submitted project/idea
In 2018 we started Fooditive journey with a dream to create healthy and affordable food for everyone. With deep understanding of the importance of sugar in food applications, while tackling the issues in the sweeteners industry, we created Fooditive Sweetener®. The first zero-calorie sweetener with taste and functionality similar to sugar.
We believe there is nothing better than the use of pure and natural raw material sources, that's why our sweetener is made completely from the valorisation of side streams of apples and pears production. This novel ingredient is 100% plant based, upcycled and "clean label-friendly".
In order to develop a sweetener that can successfully replace sugar in food products, we needed to understand the true uniqueness of sugar. We managed that by diving into the science behind sucrose, its taste, and its unique functionalities. With scientific respect to the sugar molecule itself, our sweetener development is based on a methodological approach called reversed engineering of sucrose.
After we studied the qualities of food products that contain sugar, we dived into the chemical and physical interactions happenings during the processing of such products. The result? We got to the perfect properties that our sweetener should have in order to successfully take over sugar in food applications. The high quality of our sweetener is achieved through our famous continuous fermentation "enzymology" process, which leads to the extraction of fructose from our raw material and final transformation to keto-fructose via bio-refinery. -
